I am reblogging my Mother’s Day post from last year because it still rings true this year. In some ways, I was dreading this day but after re-reading this post and the notes I have received from some of my “kids”, I am rejoicing once again in God’s decision for me.

Mother’s Day has been the toughest day of the year for me for most of my adult life. I lost my Mom 20 years ago to cancer and she always said “If you can’t show your love 365 days a year, you don’t need to celebrate it one day made up by card companies and florists”. I always did celebrate it with her and I did show my love through-out the year or I at least tried to.
As I have mentioned many times, I was not able to have a child of my own and that hurt me for many years. How could God keep the one thing I wanted more than anything away from me? This week’s Foodie Friday is another reblog because it is such a great Mother’s Day dessert! My Mom made lemon meringue pie often and it was a family favourite.
Mother’s Day is one of my favorite days — celebrating our wonderful mothers as well as the joys of motherhood.
God has blessed me with a wonderful mom whom I cherish, and since Lemon Meringue Pie is one of her favorite desserts, I would like to dedicate this post to her in honor of Mother’s Day.
In addition, God gave me the great blessing of two precious daughters, so this post is dedicated to them as well. They are my treasures.
*I prefer to use all organic ingredients
1 1/4 cups flour
1/2 teaspoon kosher salt
2 Tablespoons palm oil
6 Tablespoons coconut oil, cold
5-6 Tablespoons ice water
-Preheat oven to 475 degrees
-In a food processor, gently combine all ingredients on pulse until dough forms medium-sized pebbles. Do not over-mix. Alternatively, a pastry cutter can be used to blend ingredients.
